I like to roast my coffees at a level that is called "full city" or really just before that point. There might be just a hint of "sheen on the bean." This is to keep all of the inherent qualities the regional bans offer intact.

Blended to the perfect tone giving off beautiful aromatics, the espresso blend has a strong flavor up front with a slightly nutty flavor to the back offering a very thick crema with no bitterness.

Roasted to a rich full city, with a heat profile more rapid than most, a smooth even cup emerges from this bean. At this roast, this holds up well to a fuller thicker cup.

A medium roast with a roast profile that suggests a longer time held at moderate, even temperatures. This Sumatra has notes of of high school band warming up, lots of noise that isn't quite all in line, yet still beautiful with saxophone and flute side by side.

Who let the tuba in the room? Make this too strong and you hear tuba. Great if you like a tuba solo. Make a cup a little lighter and smooth bass notes fill your plates.
